Bob's Red Mill Reformulates Gluten Free 1-to-1 Baking Flour

After nearly five decades in the homemade food industry, Milwaukie-based Bob's Red Mill is updating its flagship Gluten Free 1-to-1 Baking Flour. The company aims to refine the texture and flavor profile of its popular blend while maintaining the precise cup-for-cup performance required for non-yeast recipes.

The updated flour blend represents a significant push to modernize the brand's core offerings. According to Daniel Barba, Vice President of Marketing, the reformulation responds directly to consumer feedback, focusing on enhancing the versatility of the product for home bakers. The flour remains processed in the company's dedicated 100% gluten-free facility, where it undergoes rigorous ELISA Gluten Assay testing to ensure safety standards.

Beyond the chemical adjustments to the recipe, the product serves as the vanguard for a broader visual shift. It is the first item in the company's portfolio to hit grocery shelves featuring the brand’s new logo and packaging design, which creative director Margret Brown noted is intended to improve consumer recognition of key product attributes. The reformulated flour is currently reaching national retailers, including Whole Foods, Costco, and Kroger, marking a fresh chapter for the employee-owned firm.
